If there is one vegetable that everyone in our house agrees on, it’s sweet potatoes! We LOVE them and eat them often-with fish, with chicken, even with our eggs in the morning! My favorite way to prepare them is to chop them up into “fries” and roast them. They are a great snack or side, they are easy to reheat, and always go fast! Here’s how I make them:
Ingredients:
3 medium sweet potatoes
1 tbsp cinnamon
1 tsp cumin
1 tsp salt
1/2 tsp pepper
2 tsp olive oil
Peel and cut the sweet potatoes into 1/2 inch sticks. Place in a large mixing bowl with cinnamon, cumin, salt, pepper, and olive oil. Using clean hands, toss well until all potatoes are well coated. You can use any other spices you may like-nutmeg, pumpkin pie spice, and brown sugar also work well. Evenly spread the sweet potatoes out on a cookie sheet. I line my sheet with parchment paper for easy clean up.
Bake at 375 degrees for 40 minutes or until soft. Serve and enjoy!
We love sweet potatoes also, but I am usually too lazed to do anything but mash them. This sounds good, I will try them.
