Sug’s Salad

My sister-in-law, Cameron, nicknamed Sugs as a child, makes this salad for every family get-together and it is my absolute favorite! It’s simple, but so bright and refreshing. The best part is I often have all the ingredients on hand, I just need to toss it together!  Here’s the recipe for 2 servings:

Ingredients:

2 cups fresh baby spinach

5 large strawberries

2 tbsp. dried cranberries

2 tbsp. sliced almonds

2 tbsp. blueberry vinaigrette

2 tbsp. crumbled goat cheese (optional)

Directions:

Place all ingredients except the goat cheese in a large mixing bowl and toss well.  Crumble goat cheese over the top if desired.  I eat the salad often and add whatever protein I have on hand.  Enjoy!
